Here are three lots of meals I have put together over the past few weeks. About three or four weeks back I became fully dairy free, in addition to being a vegetarian now for 8 years. I tend to avoid wheat when I can, but I'm trying to remove that completely from my diet. I still eat eggs. On occasion I have fake meat as some of the stuff they put out is tastier than real meat. (Especially the Beyond Meat company)

My son has gotten us all hooked on watching reruns of the Great British Bake Off, and he's completely inspired to bake and cook now more than ever (always vaguely interested, but now it's full on). For his 13th birthday, we got him a lot of equipment and inspiration, and I'm thrilled to be passing along what I know, and what I learned from my mother as well as years working with chefs. So... here are some of his co-creations, with me as guiding hands and overseer, and him doing the work:

Most recently, a blueberry coffee cake:

His post-birthday cake (2 layers of genoise with strawberry jam between, and vanilla buttercream frosting that was a bit rushed):

And a chicken, leek, and mushroom pie:

Amazing that he chose a non-dessert item as one of his first... he seems to have a penchant for baking

That chicken, leek and mushroom pie looks baked to perfection. Lucky you - talent abounding.

Here's an Asian style noodle vege dish I put together for lunch the other day, using the flavor packets of instant noodles (Mi Goreng) and rice noodles, as the flour based noodles are not really good for you.

My morning smoothie. :) (to be filled in with coconut milk. But I wanted a picture of all the layers. )

I'm also in the process of making another syrup.

I have a small video of the steam coming off of it, but I don't know if video will post here.

This looks really healthy!

For videos you need to upload it elsewhere like youtube (or Dailymotion Facebook Liveleak Metacafe Vimeo )and then just place the link in the post and it will automatically embed. (transients doesn't' have the space to host lots of videos so I haven't improved any features for this)

Just made a lemon meringue pie in a gluten free crust! Yum! This is my second time making this recipe and will be my second time tasting this kind of pie. My husband and I were both so impressed with it! Excited for it to cool down.....

Found this recipe on Facebook and finally got to try it tonight. Screenshot_20180701-194440.jpg

It's actuality really good! I added some red onion as well. And I had it on a gluten free wrap with tomato and lettuce.

I made this pie for dinner yesterday. The filling was caramelised cabbage, onion, carrots, sausage and gravy. The cabbage and onion is almost melted together, which gives the pie its flavour. No recipe... straight out of the boon box in my brain!

Gosh, that, looks delicious Melt, really fancy a piece.

This is what I had today. It’s mushrooms, spring onions, garlic( lots ) sweet peppers, herbs, Himalayan pink salt, freshly ground black pepper, couple teaspoons apple cider vinegar, cooked till soft in olive oil.
Mixed with cooked organic spinach pasta, small can tuna crumbled in, and half a can chopped tomatoes, more or less as required. Sprinkled with dried chives.

I made a peach pie today with a bunch of the peaches I got from the farm. The orchards, because of the weather, had pretty much all the peaches ripen at the same time so we had a few weeks of getting non stop peaches. (not entirely a bad problem to have.) I was able to freeze a lot. A gave a bunch to some friends, we also made peach jam and used all of that to make a peach jalapeño glaze which we froze for future meals. And here, is my peach pie.

Oozy yum.
My slice that I pulled broke apart (gluten free crust doesn't have as strong a hold) but it is still delicious. And I'll take a broken piece of pie over no pie any day. Haha
